Method

  1. 1
Remove the frozen açaí pulp from its packaging and allow it to soften at room temperature for no more than a few minutes — it must remain thick and cold, not liquid. The pulp should yield slightly under thumb pressure but hold its shape.
  2. 2
Transfer the softened pulp to a blender or heavy pestle and work it until it forms a dense, uniformly purple porridge with no icy lumps. Add the smallest possible quantity of water to assist blending if the machine requires it — the finished texture must be that of a thick, cohesive paste, not a smoothie. This step is where the dish lives or dies: a porridge that is too thin has lost the body that makes açaí a calorie source rather than a drink; a porridge that is too icy has not been properly processed. The correct consistency coats a spoon and falls from it slowly.
  3. 3
Divide the purple porridge equally among four bowls. It should hold its form in the bowl without spreading flat, sitting as a dense, opaque mound of deep purple.
  4. 4
Serve immediately alongside farinha de mandioca and dried shrimp or fried fish, presented separately so each person incorporates them as preferred. The açaí is eaten unsweetened. The porridge oxidises and deteriorates within 24 hours of processing; it must reach the table without delay. The dish is done when the purple colour is deep and uniform — any browning at the surface signals oxidation and the bowl should not be served.
