    Combine the flour and cardamom in a large bowl. Add the egg yolks, buttermilk, vanilla extract, and lemon zest. Whisk until a smooth, lump-free batter forms.

    In a separate, clean bowl, beat the egg whites to stiff peaks. Fold them into the batter in two additions, working gently to preserve as much volume as possible. The finished batter should be pale, airy, and slightly thick — not pourable like crêpe batter.

    Set the æbleskivepande over a medium flame and preheat for a full 5 minutes. Place a small cube of butter in each hemispherical well. The butter should foam and begin to colour within a few seconds of contact — this is the correct temperature. A well that takes longer than 10 seconds to foam is too cold; start again.

    Fill each well to 80 percent capacity with batter. Do not overfill — batter that overflows the rim will bond the forming ball to the pan surface and prevent clean turning. Cook undisturbed until the edges of each ball appear matte and set and the underside is golden, while the exposed upper surface remains visibly liquid. This is the 50 percent point, and it is where the dish lives or dies: too early and the liquid interior collapses; too late and the interior is already set and the batter will not close into a sphere.

    Working quickly and in order around the pan, insert a wooden skewer or thin knitting needle at the edge of each ball and rotate it 90 degrees, turning the half-set shell so that the liquid interior falls into the lower hemisphere. The shell should rotate cleanly and hold its new position.

    Continue cooking, turning each ball a further 90 degrees once or twice as needed to close any remaining seam and achieve an even golden-brown sphere all over. The finished æbleskiver are deep amber across the entire surface, firm to a light prod from the skewer, and pull cleanly from the well without resistance.

    Transfer immediately to a serving plate. Dust generously with icing sugar and serve at once, with strawberry jam alongside for dipping. Æbleskiver do not hold — they must be eaten fresh from the pan.
