    Combine the eggs and 800 ml dashi. Strain the mixture twice through a fine sieve into a clean bowl, removing all chalazae and foam, until the surface is entirely smooth and free of bubbles. The custard base should be pale, uniform in colour, and leave no residue on the sieve.

    Line a rectangular mold or parchment-lined loaf pan with plastic wrap, pressing it flat to eliminate creases. Pour the strained custard into the mold. This is where the dish lives or dies: the egg-to-dashi ratio — one egg to 200 ml dashi — must be held exactly. Too much egg and the result is rubbery; too much dashi and the block will not unmold. Once poured, skim any surface bubbles with a spoon.

    Set a steamer to 80–85 °C. Place the mold inside and steam gently, keeping the lid slightly ajar if necessary to regulate temperature. No vigorous steam should reach the surface. Steam until the custard is just set at the centre — it should tremble slightly when the mold is nudged but show no liquid movement. Surface must be smooth, not pitted.

    Remove the mold from the steamer and allow it to cool to room temperature. Transfer to the refrigerator and chill completely before unmolding. The custard is ready to unmold only when it feels firm and cold throughout — a warm custard will crumble on the knife.

    Unmold the chilled tamagotofu by inverting onto a clean board. Peel away the plastic wrap. Using a thin, sharp knife dipped in cold water, cut the block into four equal rectangular portions. Each slice should hold its edges cleanly without tearing or sagging.

    Immediately before service, prepare the ankake. Combine the dashi, mirin, and light soy sauce in a small saucepan in a 6:1:1 ratio and bring to a gentle simmer. Add the dissolved katakuriko in a thin stream, stirring constantly, until the sauce turns glossy and coats the back of a spoon. The ankake must be made fresh at this moment — a sauce prepared in advance loses viscosity on standing.

    Place one portion of cold tamagotofu into each serving bowl. Pour the hot ankake directly over the custard at the moment of service. Add a small mound of grated ginger, a sprig of mitsuba or kinome, and ikura if using. The contrast is complete when the sauce is steaming and the custard beneath it remains cold to the touch.
