    Lay the liver lobes on a clean board under good light. Working methodically, pull away and discard all bile ducts, connective membrane, and any discoloured tissue. Rinse briefly under cold water. The cleaned liver is uniformly pale pink-beige with no green or yellow staining visible anywhere.

    Place the cleaned lobes in a shallow dish. Pour over the sake and scatter the salt evenly. Turn to coat. Leave to marinate briefly at room temperature, turning once. The flesh takes on a clean, faintly rice-wine fragrance with no trace of fishiness.

    Lift the lobes from the marinade and lay them end-to-end along a sheet of plastic wrap, reshaping into a compact log. Roll as tightly as possible, twisting the ends firmly to compress the liver into a dense, even cylinder. This is the step on which the dish lives or dies: insufficient tension here will produce a loose cylinder that slices poorly and loses its signature dense, yielding texture.

    Set a steamer to hold a steady 70–75 °C. Place the wrapped cylinder in the steamer and steam for 40–60 minutes, maintaining the temperature precisely throughout. At the correct temperature, the cylinder feels just firm to a light press through the wrap, with no softness at the centre; if temperature has crept above 75 °C, the interior will feel grainy rather than smooth.

    Remove the cylinder from the steamer and allow it to cool to room temperature. Transfer to the refrigerator and chill overnight. The finished cylinder is fully firm: it holds its shape when unwrapped and shows no give when pressed.

    Unwrap and slice the chilled cylinder into rounds approximately 1 cm thick using a thin, sharp blade in a single drawing motion. Each slice is pale pink-beige, cleanly cut, and holds its disc shape without crumbling at the edge.

    Arrange the slices on a chilled plate. Alongside, set a small mound of momiji oroshi-seasoned grated daikon and a few rounds of finely sliced negi. Pour the ponzu into a small dipping vessel. The ponzu's sharp citrus-acid scent should contrast cleanly against the liver's deep, oceanic richness.
