    Toast the bread slices until deep golden and rigid across the surface. The bread must be sturdy enough to bear the weight of the avocado without yielding; press the surface lightly with a finger — it should offer firm resistance with an audible crunch.

    Mash the avocado with a fork to a rough, textured paste — or slice it and fan it across the toast. Add the lemon juice and season with flaky sea salt and black pepper. Taste: the fat of the avocado should be rounded and bright, lifted by the acid, with the salt fully integrated.

    Spread or arrange the avocado generously over the hot toast. Drizzle with olive oil. Add any optional toppings — red pepper flakes, sliced radish, microgreens, everything bagel seasoning, or dukkah — and, if using, place a freshly poached egg on top. The surface should present a clean contrast of green against the dark toast, with the olive oil catching the light in a visible sheen.
