Add warm water gradually — slightly less than for a standard Mexican tortilla dough — and knead until a smooth, cohesive dough forms. It should be soft but not sticky, and hold its shape without cracking. Divide into four equal balls. Rest, covered, for 20 minutes: the dough is ready when it no longer springs back under a finger.

Roll each ball into a round approximately 25 cm in diameter and 1 cm thick. This is the Honduran distinction: the tortilla must be substantially thicker than a Sonoran Mexican flour tortilla. Heat a dry comal or heavy skillet over medium heat. Cook each tortilla until brown speckles appear on the underside and the surface begins to puff — then flip. The finished tortilla is soft and pliable, not crisp.

If cooking beans from dried: simmer soaked red kidney beans in unsalted water until completely tender throughout, then drain, reserving cooking liquid. Heat lard or oil in a heavy pan over medium heat. Add the cooked beans in batches, mashing as they fry, incorporating reserved liquid as needed to reach a thick, spreadable paste. Salt to taste. This step decides the dish: the beans must be red kidney — not black — and must be fried long enough that they hold their shape on the tortilla without running. The paste is done when it pulls away cleanly from the pan sides.

If including scrambled egg: beat the eggs and cook in a lightly oiled pan over medium-low heat, stirring slowly, until just set but still soft. Remove from heat while the curds are barely firm — residual heat finishes them.

Assemble each baleada on a warm tortilla in this order: a generous layer of refried red beans spread to the edges, a spoonful of Honduran crema, then the chosen additions — scrambled egg, crumbled cheese, avocado, pork rind — in any combination. The simplest baleada carries beans and crema alone. Fold the tortilla in half over the filling. Do not roll; do not close the open end. Serve immediately.
