    Work the garlic cloves with a pinch of coarse salt under the flat of a knife, pressing and dragging repeatedly until a smooth, even paste forms. The paste should be homogeneous and leave no raw chunks visible on the blade.

    Place the fromage blanc in a ceramic or glass bowl. Add the crème fraîche and beat together with a fork or whisk until just smooth and combined. Stop the moment the mixture is uniform — this is where the dish lives or dies: overworking the curd breaks its structure and produces a gluey, slack paste that no amount of resting will correct.

    Fold in the garlic paste and the minced shallots. Add all the freshly chopped herbs — chives first and in the greatest quantity, then parsley, chervil, and the seasonal herb of choice. Fold with a spatula rather than beating. The mixture should show an even, green-flecked distribution throughout; no streaks of plain white should remain.

    Season with salt, white pepper, and a hint of paprika. Taste: the seasoning should read assertive against the dairy base, as it will carry across to unseasoned boiled potato. Adjust salt with particular attention — insufficient salt is the most common failure.

    Cover the bowl and refrigerate for a minimum of 1 hour; 4–6 hours is the ideal window. The spread is ready when the separate aromatic elements — garlic, shallot, herbs — have melded into a single, cohesive fragrance rather than announcing themselves individually.

    Boil the potatoes in well-salted water in their jackets until a skewer meets no resistance at the centre. Drain and bring to the table immediately. Serve the cold bibeleskaes in its ceramic bowl alongside the steaming potatoes and the bread. The diner splits each potato and fills it with spoonfuls of the herb cheese: the contrast of hot potato and cold, herb-fragrant cheese is the purpose of the dish.
