    Set a wide, heavy skillet over medium heat. Add the sausage and cook, breaking it into crumbles with a spoon, until it is thoroughly browned and the fat has fully rendered. The meat should be deep golden brown with no pink remaining. Remove the sausage with a slotted spoon and set aside; leave all rendered fat in the pan.

    Sprinkle the flour (2–3 tablespoons, depending on how much fat has rendered) directly into the hot sausage fat. Stir constantly over medium heat for 1–2 minutes. The roux should smell toasted and nutty, not raw — this is where the dish lives or dies: too little cooking and the gravy will taste of raw flour; draining the fat before this step destroys the foundation of the dish entirely.

    Add the whole milk in a slow, steady stream, whisking constantly. Continue to whisk as the mixture thickens, ensuring no lumps form. Reduce heat slightly if the gravy begins to catch. Add milk in increments until the gravy is thick enough to coat the back of a spoon heavily and mounds slightly — it should flow slowly, not pool.

    Return the browned sausage crumbles to the skillet. Stir to distribute evenly through the gravy. Season aggressively with coarsely ground black pepper — the pepper is the primary seasoning and must be clearly present on the palate — then adjust salt. Taste: the gravy should be savoury, meaty, and noticeably peppery.

    Split the hot biscuits and arrange cut-side up on warmed plates. Ladle the gravy generously over the open biscuits so that it mounds on the surface. Serve immediately.
