    Keep all equipment — grinder plate, bowl, and mixing paddle — well chilled before beginning. Trim the pork shoulder into rough cubes. Combine with the back fat and pass through a coarse grinder plate, working quickly so that the fat remains below 4 °C throughout. The ground mass should show distinct particles of meat and fat, not a smeared paste. If the fat begins to look shiny or softened, return the meat to the freezer for 15 minutes before continuing.

    Transfer the cold ground meat to a chilled bowl. Add the salt, white pepper, nutmeg, ginger, and fresh marjoram. Mix by hand or with the paddle of a stand mixer on the lowest setting. This is where the dish lives or dies: mix only until the proteins bind and the mass becomes just sticky when pressed between the fingers — the moment it pulls away cleanly from the bowl wall. Mixing beyond this point produces a dense, elastic texture that is not correct; mixing short of it produces a crumbling sausage. The test is tactile: the forcemeat should feel tacky but not elastic.

    Feed the soaked natural hog casings onto the sausage nozzle without piercing them. Fill steadily, forming links of the desired length — 6–9 cm for a Nürnberger style, longer for a Thüringer style. The finished sausage should feel firm and evenly filled, without air pockets. Do not pierce the casings at any stage. Twist and tie the links, then refrigerate uncovered on a rack overnight. After overnight resting, the surface will appear slightly dried and the sausage will feel uniformly firm throughout.

    Prepare a grill over beechwood or charcoal at moderate heat — the coals should be ash-grey with no open flame. Place the sausages on the grill without piercing. Cook for 8–10 minutes per side over medium heat. The casing will colour to an even, deep amber-gold and tighten visibly around the filling. The correct result is moderate, even caramelisation across the entire surface; any blackened or carbonised patches indicate excessive heat.

    Serve immediately in the manner of the regional style: Nürnberger — three sausages in a Brötchen with süßer Senf; Thüringer — on a plate with sharp mustard and Sauerkraut. On biting, the casing should give a clean snap, releasing a burst of fat and juice. A casing that does not snap, or a sausage that is dry inside, indicates an error in fat temperature, piercing, or heat management.
