Cajun Cornbread Dressing

    The day before: crumble the cornbread into rough, uneven pieces and spread them in a single layer on a sheet tray. Leave uncovered at room temperature overnight, or toast in a 150 °C oven for 15 minutes, until the surface of the pieces is dry to the touch and no longer tacky. The pieces must yield no moisture when pressed.

    Set a wide, heavy pan over medium-high heat. Add the fat and, when shimmering, add the ground pork. Brown thoroughly, breaking up the meat — do not stir constantly; allow fond to develop on the pan bottom. Season with half the Cajun seasoning. The meat is ready when it is evenly browned with no grey patches and the pan carries a dark, fragrant crust.

    Reduce the heat to medium. Add the onion, celery, and green bell pepper to the meat without draining the fat. Cook, stirring and scraping up the fond, until the trinity has softened completely and the onion is translucent, approximately 8 minutes. Add the garlic and the remaining Cajun seasoning; cook a further 2 minutes. Taste and adjust seasoning now — the cornbread will dilute the mixture substantially. The vegetables should be fully tender and the seasoning assertive.

    This is where the dressing lives or dies. Transfer the dried cornbread crumbles to a large mixing bowl. Add the meat and vegetable mixture and fold together. Begin adding the stock in stages — 100 ml at a time — folding gently after each addition. The cornbread will absorb the stock; continue until the mixture is uniformly moist and holds its shape when scooped with a spoon but does not pool liquid at the bottom of the bowl and is not soupy. The crumble pieces should remain distinct, not dissolved into a paste. Stop adding stock the moment this condition is met.

    Add the beaten eggs and fold through until evenly distributed. The mixture should tighten slightly and appear cohesive.

    Transfer the mixture to a lightly greased large baking dish (approximately 33 × 23 cm). Spread evenly without compressing. Bake at 175 °C for 35–45 minutes. The dressing is done when the top is deep golden-brown and firm to a light press at the centre, with no liquid weeping at the edges.
