    Place the chopped potatoes, onion, and garlic in a large pot. Cover with the water and season with salt. Bring to the boil, then reduce to a steady simmer. Cook until the potatoes are completely tender and beginning to fall apart — a knife should meet no resistance.

    Remove and reserve the cooking liquid. Pass the solids through a blender or use an immersion blender, adding the cooking liquid back gradually, until the base is entirely smooth — no grain, no lumps, no trace of texture. Return all liquid to the pot. This is where the dish lives or dies: any residual lump in the base will fracture the textural contrast with the greens that the dish depends upon.

    Add the whole chouriço to the smooth base and bring the soup to a gentle simmer. Cook for several minutes so that the paprika-rich fat from the chouriço disperses into the broth. Remove the chouriço, slice it into rounds, and set aside.

    Bring a separate small pot of well-salted water to a rolling boil. Add 1 tablespoon of olive oil, then add the kale chiffonade and blanch briefly — no more than 1 minute — so that each ribbon is coated and the chlorophyll is set. Drain immediately.

    Bring the potato base back to a full boil. Add the blanched kale chiffonade and cook for no more than 2 minutes. The greens must retain their vivid green colour and offer slight resistance when pressed between the fingers — any yellowing or softness means they have cooked beyond the point of recovery.

    Ladle the soup into warmed bowls. Place one or two slices of chouriço into each bowl. Finish with a generous thread of raw olive oil poured directly over the surface — not a garnish, but a structural element that carries the soup's aroma on approach.
