    Place the silken tofu block on a clean cloth set over a rack. Fold the cloth over and refrigerate for a minimum of 2 hours. The tofu is ready when the cloth shows clear moisture absorption and the block holds its shape when the cloth is peeled away without weeping visibly onto a dry plate.

    Fry the garlic chips in neutral oil over a medium-low flame, stirring constantly. Remove the moment they turn pale gold — they continue to colour off the heat. Drain on paper. Repeat with the shallot slices. Both should be crisp and dry, not soft or bitter.

    Shell the century eggs while they are still very cold from the refrigerator. Rinse briefly and slice cleanly with a thin wet knife. The snowflake crystal pattern in the translucent white confirms premium grade; the yolk centre should be dark jade-grey and set. Warm eggs resist the blade and lose their dramatic cross-section — cold is essential here.

    Unmould the drained tofu onto a chilled serving plate. Arrange the century egg slices over and around the tofu. This is the step on which the dish lives or dies: the tofu must carry no pooled water beneath it and the dressing must meet a dry surface — any residual moisture from insufficient draining will dilute the dressing and render the dish irretrievably soggy.

    Apply the dressing in strict sequence. Spoon the light soy or fish soy over the tofu and egg first. Follow with the sesame oil. Add a few drops of aged black vinegar. Finish with the chilli oil. Each layer should be visible as a separate pool before the dish is brought to the table — tasting at this stage, the dressing should read clean-savoury, sesame-rounded, and just brightened by the vinegar without any single element dominating.

    Scatter the toasted sesame seeds, fried garlic chips, fried shallot, and spring onion greens over the surface. Serve immediately at a slightly chilled temperature — below 10 °C suppresses the layered flavour; the dish should be cool to the hand but not ice cold.
