Cassata Siciliana — The Full Technique

    Day one: suspend the sheep's milk ricotta in cheesecloth over a bowl and refrigerate overnight. The ricotta must shed its excess whey entirely; the drained curd should be dense and hold its shape under a spoon.

    Day two: work the drained ricotta through a fine sieve into a bowl. Beat in the sifted icing sugar until the mixture is smooth and homogeneous. Fold in the candied citrus peel, dark chocolate chips, and cinnamon. The filling must be firm enough to hold a clean edge when cut — loose or wet filling indicates insufficient draining.

    Line a round, deep mould (the traditional qas'ah form) with cling film. Cut the sponge into strips and slabs to line the base and sides of the mould in an even layer, trimming pieces to fit without gaps. Combine the Marsala and water and brush the sponge lining generously and repeatedly until it is deeply saturated and yields to the touch with no resistance — insufficient soaking is a common failure.

    Fill the lined mould with the ricotta mixture, pressing it level. Cover the top with the remaining sponge slabs and brush these too with the diluted Marsala until saturated. Wrap the mould tightly and refrigerate for a minimum of several hours, or overnight, until the structure is completely set and holds its domed form when inverted. This is where the cassata lives or dies: a filling that has not firmed and a sponge that has not bonded to it will collapse on unmoulding, and no decoration can repair it.

    Work the almond paste with the icing sugar and the pistachio paste or spinach juice until the colour is even, bright green, and the paste is smooth and pliable with no cracking at the edges when rolled. Roll out between sheets of parchment to an even thickness of approximately 4 mm.

    Invert the chilled cassata onto a wire rack set over a tray. Peel away the cling film. Lay the rolled green marzipan over the dome and press it gently to conform to the shape, trimming the excess cleanly at the base. The exterior should be smooth, unbroken, and uniformly green.

    Beat the egg whites to a loose foam. Add the sifted icing sugar and lemon juice and beat to a smooth, thick royal icing that falls in a slow, unbroken ribbon from the lifted beater. Pour and spread it over the marzipan exterior in an even white coat. The surface must be without ripple or streak.

    While the royal icing is still yielding, apply the baroque decoration: candied citrus halves, crystallised cherries, and geometric piped icing patterns across the full surface. Decoration that is minimal or restrained misrepresents the form — cassata siciliana is, by its nature, extravagant. Refrigerate the completed cassata for 24 hours. At the table the icing is matte-set, the colours vivid, and the interior, when cut, shows clean distinct layers of white filling, dark chocolate, and amber-stained sponge.
