    Dispatch each live eel immediately before cooking with a firm blow to the head. Nail the tail end to a board. Grip the skin at the back of the head and strip it downward in a single pull. Clean and rinse each skinned eel in cold water. Cut into sections of 6–8 cm. Dry the sections thoroughly with a cloth. The slime layer under the skin must not enter the braising liquid — any ammonia note at this stage signals that the eel was dead before dispatch and the cook must stop.

    Heat the olive oil in a heavy pan over high heat. Add the eel sections in a single layer without crowding. Brown on all sides until the exterior caramelises to a deep golden colour. Remove the sections and set aside. The pan should carry a dark fond — this is the structural base of the braising liquid.

    Reduce the heat to medium. In the same pan, sweat the diced onion until softened and translucent, then add the garlic. Add the tomato concassé, bay, wild thyme, and parsley. Stir briefly to combine. Pour in the red wine — generous, tannic, structured. This is where the dish lives or dies: the wine must reduce by half before the eel returns; a light-bodied wine left unreduced will yield a greasy, unresolved sauce that no subsequent step can correct. Reduce until the wine volume is halved and the surface carries a thickened, aromatic sheen.

    Return the browned eel sections to the pan. Add cold water until the sections are barely covered. Cover with a lid and braise at a gentle, steady simmer for 25–30 minutes. At 25 minutes, lift the lid: the sections should hold their form, the braising liquid should carry a visible sheen of eel fat on the surface, and the flesh should pull cleanly from the spine with no rubberiness when tested with a fork.

    Remove the bay, thyme sprigs, and parsley. Taste the braising liquid: it should be rich, fat-enriched, and carry herb length through the finish. Adjust salt with Camargue sea-mineral-salt at the table, not in the pan. Ladle into deep bowls, ensuring each portion receives both sections and braising liquid. Serve immediately with thick country bread alongside.
