Arrange the pre-cooked chicken, blanched shrimp, mushrooms, and ginkgo nuts in the base of four lidded chawan-mushi cups. Distribute evenly and keep pieces small — large or heavy items sink before the custard sets, creating empty pockets. Tuck mitsuba sprigs among the solids.

Beat the eggs gently — without incorporating air — in a bowl. Add the cold dashi (200–220 ml per egg), usukuchi soy, mirin, and salt. Stir until fully combined. Pass the entire mixture through a fine-mesh strainer into a pouring vessel, discarding chalaza and any foam. The strained liquid should be perfectly clear and pale gold — any residual foam on the surface should be skimmed away before pouring.

Pour the strained custard mixture into each cup, filling to within 1 cm of the rim. Cap each cup with its lid. Fill the steamer base with water and bring it to a full rolling boil.

This is where the dish lives or dies. The moment steam begins circulating, reduce the heat immediately and decisively to very low — the target internal steam temperature is 80–85°C, never higher. Wrap the steamer lid in a clean cloth before securing it; the cloth absorbs condensation before it can drip onto the open custard surface. To verify temperature, observe a drop of cold water placed on the steamer surface: at 80°C it evaporates slowly; at 100°C it vanishes instantly. Adjust heat to the slow-evaporation rate before the cups enter. Steaming at full heat from first to last is the universal failure: above 85°C, bubble formation sets into the egg matrix as 'su' — irreversible honeycomb porosity that no further technique can correct.

Steam at the maintained low temperature for 12–15 minutes. The custard is done when it quivers uniformly across its entire surface when the cup is tapped gently — a liquid-moving centre indicates undercooking; a rigid, non-jiggly response indicates overcooling. The surface should be smooth and unblemished, with no bubble craters.

Remove the cups from the steamer. Lay a strip of yuzu peel or a mitsuba leaf directly on the surface of each custard as suikuchi aromatic accent. Replace the lids and serve immediately in the cup.
