    Combine the eggs with the cold ichiban-dashi in a bowl. Add the usukuchi soy, mirin, and salt. Stir gently with chopsticks or a fork — the aim is to break the eggs without introducing air. Pass the mixture through a fine-mesh strainer into a jug, discarding chalazae and any surface foam. The liquid should be perfectly smooth and clear-gold: no bubbles visible on the surface.

    Divide the garnishes — ginkgo nuts, chicken, prawn, kamaboko, and mitsuba — among four chawanmushi cups or deep heatproof cups, arranging them in the base and lower walls. Pour the strained custard liquid over the garnishes, filling each cup to within 1 cm of the rim. Cover each cup with a sheet of foil pressed lightly over the top to prevent condensation drips from cratering the surface.

    Set the cups in a steamer over high heat. Once vigorous steam rises, set the timer for 2 minutes to initiate the set, then immediately reduce the heat to the lowest setting that still produces a steady, gentle steam. Prop the lid slightly ajar — a folded kitchen cloth between lid and pot serves this purpose and absorbs condensation. Steam temperature in the chamber must remain at 80–85°C; above 90°C the custard will develop su — a porous, honeycomb-like granular texture that no finishing step can repair. This is where the dish lives or dies: temperature discipline throughout the steaming period is the single act on which texture depends.

    Steam on low for 12–15 minutes. To test, insert a thin skewer or the tip of a chopstick into the centre of one cup: the liquid that wells up should be clear, not cloudy or milky. The custard surface should tremble as a unified, silky mass when the cup is gently nudged — not ripple as a liquid, not stand firm as a set jelly.

    Remove the steamer from the heat. Replace the lid fully and rest the cups inside for 2 minutes; residual heat completes the setting gently without risk of su. Lift the cups clear, remove the foil, and serve immediately in their cups. The custard should part cleanly under a spoon to release a clear, fragrant dashi broth from within.
