    If making from scratch: grind the pollock or white fish with fine salt in a food processor until the paste becomes cohesive and slightly tacky. This is the salt-myosin interaction — the paste must develop a visible sheen and pull cleanly from the bowl wall before proceeding.

    Work the starch and sugar into the paste until fully incorporated. The mixture should hold a shape when pressed between two fingers without crumbling or weeping liquid.

    Form the paste around a bamboo skewer in an even cylinder of approximately 2 cm diameter, smoothing the surface with wet hands. The paste must adhere firmly and show no seams or air pockets, or it will split during grilling.

    Grill over binchotan charcoal or directly over a gas flame, turning steadily, until the outer surface develops characteristic dark-brown contact marks and a smoky, slightly charred aroma rises from the fish. This step — whether applied to a freshly formed tube or a commercial chikuwa held briefly over the flame — is where the dish lives or dies: without the char, the grilled marks, and the smoke, the product is a different article entirely. The interior should remain soft and springy when pressed gently with tongs.

    Slide the skewer free while the chikuwa is still warm; the hollow centre will be clean and open. If stuffing with cheese (chiizu chikuwa), allow the tube to reach room temperature before inserting the cheese slices — a cold tube will crack when handled. Return stuffed pieces to low heat until the cheese is just melted, visible as a slight bulge at the tube ends.

    For oden: lower the chikuwa into dashi broth held at a gentle simmer — never a rolling boil. The tube will absorb the broth and swell slightly over extended cooking. The dish improves with time in the pot, but remove before the surface begins to wrinkle and the flesh shrinks perceptibly, which marks the onset of toughening.

    For isobe-yaki: coat room-temperature chikuwa in aonori-green seaweed tempura batter and deep-fry until the batter is pale gold and set, with an audible crisp sound when tapped lightly with a chopstick.
