Build the sauce in a bowl, beginning with the sesame paste alone. Add the soy sauce and work it in with a spoon or small whisk until combined. Add the sesame oil, then introduce the hot water in very small additions — one teaspoon at a time — whisking continuously until the sauce is thick, glossy, and pourable. Add the chilli oil, black vinegar, sugar, and minced garlic. Stir to combine. Set aside for 30 minutes to allow the flavours to integrate. The sauce is ready when it falls from a held spoon in a slow, continuous ribbon — not in drops, not in a free-flowing stream.

Cook the noodles in well-salted boiling water until al dente — slightly firmer than seems correct, as the sauce will continue to soften them. Reserve one tablespoon of the starchy cooking water before draining. Drain immediately and rinse thoroughly under cold running water until the noodles are entirely cold. Drain well, then toss with the teaspoon of sesame oil to prevent sticking. Each strand should feel separate and lightly slicked.

Stir the reserved tablespoon of hot noodle cooking water into the finished sauce and adjust: more sesame paste to thicken, more hot water to thin, more black vinegar if the sauce tastes heavy. The aroma should be simultaneously rich and bright — intensely nutty and toasty with a clear acid note cutting through.

Immediately before serving, pour the sauce over the noodles and toss to coat evenly. Arrange the smashed cucumber and blanched bean sprouts over the top. Scatter the spring onion and toasted sesame seeds as the final garnish. The surface should look lightly slicked with sesame oil, not pooling; the noodles should be individually coated, deep brown and glossy; the cucumber should be bright green against them.

Taste before bringing the bowl to the table. The first impression should be deep sesame richness; vinegar acidity should brighten the mid-palate; chilli heat should build at the back; raw garlic should linger. Nothing should dominate. Adjust with a few drops of black vinegar or chilli oil as required.
