    Soak the drained rice in cold water for at least 30 minutes. Drain fully. Soaking begins the breakdown of the grain structure; day-old cooked rice may be used in its place to the same end. The rice is ready when it has visibly swelled and yields slightly under pressure.

    Bring the stock to a vigorous boil in a large, heavy pot. Add the drained rice and the julienned ginger. The ginger cooks throughout to eliminate any rawness from the stock. Stir once to prevent the rice settling on the base.

    Maintain high heat for the first 15 minutes, stirring occasionally to prevent sticking. This is where the dish lives or dies: the sustained high heat — and the 1:10 ratio of rice to liquid — is what drives the grains to break down fully into a silky, homogeneous porridge rather than a loose rice soup. Watch that the liquid does not boil dry; the congee must flow and pool freely when the pot is tilted, never sitting rigid.

    Reduce to a steady simmer. Cook uncovered for a further 1 hour to 1 hour 45 minutes, stirring occasionally in the first half of cooking only. Cease stirring as the congee approaches its final consistency; agitation at this stage prevents the porridge from reaching full silkiness. The congee is done when the grains have dissolved entirely and the surface has a smooth, uniform sheen.

    Optional but recommended: ladle approximately 10% of the cooked congee into a blender, process until smooth, and stir back into the pot. This step creates extra silkiness without extended cooking. The returned purée will be glossy and indistinguishable from the body of the porridge.

    Season well with white pepper, sesame oil, and salt. Taste: the congee must be assertively seasoned — it is a canvas, not a backdrop. Ladle into warmed bowls and arrange toppings — century egg wedges, sliced pork or raw fish fillet (which will cook in the heat of the porridge), and additional ginger julienne — over the surface.
