    Procure the you tiao on the morning of service. They must be fresh from the fryer — within two hours. Inspect the exterior: it should be uniformly golden and rigid, with a hollow, airy interior when broken. A yielding or pallid crust signals staleness and the pairing cannot proceed on that basis.

    Heat the soy milk in a small saucepan over medium heat until it steams vigorously and a fine skin begins to form at the surface. Pour into bowls immediately. The milk must reach the table piping hot; the thermal contrast between the hot liquid and the oily dough is integral to the morning function of this pairing. This is where the dish lives or dies: cold soy milk dissolves the entire point.

    Season the soy milk at the bowl according to preference. For the sweet version, stir in the sugar until dissolved. For the savoury version — associated with Shanghai and the north — add a pinch of fine salt and lay sliced pickled mustard green alongside or directly in the bowl.

    Tear the you tiao crosswise into sections of approximately 5 cm. Dip each section briefly and completely into the hot soy milk — a short immersion only. The crust softens at its outer edge while the interior remains hollow and chewy. Extended soaking causes the dough to disintegrate; the crust must retain enough resistance to contrast with the silky liquid.

    Alternatively, tear the you tiao into sections and place them directly in the bowl of soy milk. They will soften progressively as the meal proceeds. Eat immediately, while the milk is still hot and the dough retains some structure.
