Combine the rice vinegar, sugar, and salt in a small saucepan over low heat. Stir only until the sugar and salt dissolve — do not boil. Set the seasoning mixture (chirashi su) aside to cool. Cook the washed rice by the absorption method. While still warm, turn it into a wide, flat non-metallic vessel. Pour the cooled chirashi su evenly over the surface and fold it through the rice with a cutting motion, fanning simultaneously to cool. The rice is ready when each grain is separate, glossy, and carries a clean vinegar brightness on the tongue.

Beat the eggs with the sugar until fully combined. Strain through a fine sieve. Set a lightly oiled non-stick pan over low heat and pour in just enough egg mixture to coat the base in a thin, even sheet — a crepe of uniform thickness. Cook without colouring until the surface is set and no longer wet to the eye. Slide onto a board, roll loosely, and cut across into fine ribbons (kinshi tamago). The ribbons should hold their shape and show no browning.

Simmer the lotus root slices in lightly seasoned dashi until just tender but retaining resistance when pressed between finger and thumb. Blanch the snap peas separately in unsalted boiling water for 90 seconds, then refresh immediately in iced water to fix their colour. Each vegetable is prepared and seasoned independently so that its flavour integrity is preserved when the dish is assembled.

This is where the dish lives or dies. Mound the warm — not hot — sushi rice into a large bowl or lacquered box to a depth sufficient to support the toppings without slumping. Scatter the kinshi tamago egg ribbons and sakura denbu evenly across the rice surface to establish the yellow and pink colour ground. Arrange the salmon, tuna, and prawns in overlapping clusters across the surface, building height at the centre and allowing lower elements toward the perimeter. Place lotus root, snap peas, and ikura in the remaining gaps. The composition must read as a three-dimensional landscape of controlled abundance — not geometric rows, not random scatter — with deliberate variation in density and height. Every colour element from the seasonal palette must be legible at a glance.

Serve immediately or within a maximum of two hours of assembly. Beyond that point the exposed rice surface dries and the raw fish loses its fresh character. The dish is ready to serve when the surface presents vivid colour contrast, the fish glistens with moisture, and the rice at the perimeter shows no drying or crust.
