    Cook the washed rice by your usual absorption method. While it is still steaming, dissolve the sugar and salt in the rice vinegar. Turn the hot rice out into a wide, non-metallic vessel — ideally a wooden hangiri or ohitsu. Pour the seasoned vinegar over the rice in a thin stream. Fold with a flat paddle using cutting strokes, fanning the rice simultaneously to drive off steam. The rice is ready when it is glossy, each grain separate, and the temperature has fallen to that of the back of your hand — body temperature, no cooler.

    Beat the eggs with the pinch of sugar until fully homogeneous. Set a non-stick pan over low heat and film with neutral oil. Pour in just enough egg to coat the base in a very thin, even layer. Cook without colour until the surface is just set — no wet patches — then slide onto a board. Repeat until all the egg is used. Stack the sheets, roll loosely, and cut across into fine julienne strips: the kinshi tamago, which are the golden confetti garnish of Hinamatsuri chirashi. The strands should be fine enough to drift rather than clump.

    Slice the hirame and the second fish thick, echoing nigiri toppings, for Edomae-style chirashi. Keep all raw fish refrigerated until the moment of assembly; the rice, not the fish, carries the temperature of the dish.

    Portion the sushi rice into four lacquered bowls or one large ohitsu. Apply the rice as the base layer. Scatter a second layer of kinshi tamago and nori strips over the rice surface, covering it with colour but preserving sight of the white rice beneath. This is the moment on which the dish lives or dies: the rice must be at body temperature — neither refrigerator-cold nor hot — and each topping must be placed with spacing sufficient to make every colour legible. A cold or crowded bowl cannot be corrected after service. Lay the proteins — hirame, the second fish, shrimp — over the rice with deliberate separation. Spoon the ikura last among the proteins, its red against white the chromatic anchor of the Edomae composition.

    Complete the garnish in order: shiso first, then nori strips if not already applied at the second layer, then negi, then microgreens as the final element. The finished bowl should present the five-colour guideline — red (ikura, shrimp), white (hirame), yellow (kinshi tamago), black (nori), green (shiso or microgreens) — each colour distinct to the eye.
