Method

    If using brown butter, place the 170 g butter in a light-coloured saucepan over medium heat. Cook, swirling frequently, until the foam subsides and the milk solids turn the colour of hazelnuts and the kitchen smells of toasted nuts — the butter has reached 150°C. Pour into a bowl immediately to arrest cooking and allow to cool to room temperature. Stir in 15 ml milk to restore lost water content before proceeding.

    Whisk together the 240 g flour, 5 g baking soda, and 5 g fine salt in a bowl. Set aside.

    For the creaming method: beat the softened butter with the 100 g dark brown sugar and 80 g granulated sugar until the mixture is pale and slightly increased in volume — the sugar crystals should no longer be distinctly audible when the beater moves. For the melted or brown-butter method: whisk the cooled butter and both sugars together vigorously by hand until the mixture is smooth and homogeneous.

    Add the eggs one at a time, incorporating fully after each addition, then add the 5 ml vanilla. The mixture should appear glossy and slightly thickened.

    Fold in the flour mixture until no dry streaks remain. Do not overwork. Fold in the 200 g chopped chocolate. The dough will be soft and slightly tacky to the touch.

    This is where the dish lives or dies: chop the bar chocolate with a serrated knife into irregular shards — not uniform chips. The uneven pieces must range from thin splinters to thick chunks so that they melt at different rates in the oven, creating thin veins and thick pools of chocolate throughout the cookie. No chip engineered to hold its shape can produce this result.

    Cover the dough and refrigerate for a minimum of 24 hours and up to 72 hours. The dough is ready when it is fully hydrated, firm enough to scoop cleanly, and the surface has darkened slightly as the sugars dissolve into the mass.

    Heat the oven to 190°C. Scoop the dough into 75 g portions and place on a lined baking sheet with 7–8 cm between each. Press flaky salt into the surface of each portion. Bake for 10–12 minutes, rotating the pan at the halfway point. Pull the cookies when the edges are golden and set and the centre still appears slightly underdone and glossy — the surface will look wet at the centre. The cookies will continue to firm on the pan for five minutes.

    For the crackled, rippled surface: bang the sheet pan firmly on the oven rack twice during the last two minutes of baking. The partially set dough will deflate and re-puff, forming concentric ripples. Rest on the pan for five minutes before transferring — the edges should shatter at the touch while the centre yields.
