    Rinse the sauerkraut briefly under cold water and squeeze it firmly in both hands. Set aside. In a large, heavy casserole over medium heat, render the lardons in the goose fat or lard until golden on all sides. Remove with a slotted spoon and reserve. Add the sliced onion to the same fat and soften over low heat until translucent and without colour.

    Layer the sauerkraut over the onion. Scatter the juniper berries, bay leaves, cloves, and peppercorns evenly across the sauerkraut. Return the lardons to the pot. Nestle the smoked pork knuckle into the centre. Pour over the Riesling to just cover the sauerkraut. The liquid should be visible at the base of the sauerkraut layer; if it falls short, add a small amount of water to reach that level.

    Cover the casserole tightly and place in an oven set to 150 °C. Braise for 3 hours in total, checking the liquid level periodically. The pot should never boil aggressively — a slow, barely perceptible simmer at the surface is the correct condition.

    At the 2-hour mark, add the smoked bacon piece, pushing it into the sauerkraut. At 2 hours 15 minutes, add the Strasbourg sausage or bratwurst, laying them across the top of the sauerkraut. Replace the lid after each addition and return the casserole to the oven.

    At 2 hours 50 minutes — 10 minutes before service — lower the oven to its minimum or transfer the casserole to the gentlest possible heat on the stovetop. Lay the boudin noir on the surface of the sauerkraut. The heat must be barely simmering: boudin noir disintegrates under any aggressive heat. This is the step on which the dish lives or dies — monitor the final 10 minutes without interruption, and do not allow the liquid to bubble. The blood sausage is ready when it is heated through and yields gently to the touch; a skin that has tightened and begun to split signals the outer limit.

    Transfer all the pork products to a large, warmed platter, arranging them over a bed of the braised sauerkraut. Serve the boiled new potatoes alongside and Dijon mustard at table. The sauerkraut should smell of Riesling, juniper, and clean lactic acid — not of vinegar, and not of overcooked pork.
