    Spread the diced aubergine in a colander, toss with coarse sea salt, and set a weighted plate on top. Leave for at least 30 minutes. Rinse under cold water and press firmly in a clean cloth until the cubes feel dry to the touch — they should yield no further moisture when squeezed.

    Heat the olive oil in a wide, heavy pan over medium-high heat. Fry the dried aubergine in a single layer, turning, until each piece is uniformly golden and slightly crisped at the edges. Remove with a slotted spoon and set aside. The oil remains in the pan.

    In the same pan and oil, add the diced potatoes. Cook uncovered over medium heat for 12–15 minutes, turning occasionally, until the edges are just beginning to colour and the cubes offer slight resistance when pressed — they are partially cooked, not tender through.

    Add the sweet peppers and friarelli to the pan. Continue cooking uncovered, stirring, until they have softened and the pan smells of roasted pepper — approximately 8 minutes. Moisture must be allowed to evaporate fully at this stage; a watery pan at this point produces a watery stew.

    Add the courgettes and cook uncovered for a further 5 minutes, stirring to coat them in the oil, until they have taken on some colour but remain just short of tender.

    This is the step on which the dish lives or dies: add the reserved fried aubergine, the crushed ripe tomatoes, the torn basil and the crumbled peperoncino. Stir to unify, then cover the pan and reduce the heat to low. Braise for approximately 40 minutes, checking occasionally, until the sauce is thick and jammy, the oil has visibly separated to a glossy pool at the edges, and all vegetables are fully tender but hold their shape. A watery surface at this point means the lid came on too early — remove it and reduce uncovered until the sauce coheres.

    Remove the pan from the heat and allow the stew to cool to room temperature, uncovered. Before serving, taste for salt and finish with a thin drizzle of raw olive oil. The flavours should be round, sweet, faintly hot and deeply integrated — not sharp, not oily, not separate.
