    Make the pasta dough. Mound the flour on a work surface, make a well, and break in the eggs with a pinch of salt. Draw the flour in gradually and knead until the dough is smooth and elastic. Wrap and rest at room temperature for at least 30 minutes. The dough is ready when it springs back slowly under a finger.

    Prepare the filling. Ensure the riced potato, blanched greens, plumped figs and raisins, and grated chocolate are all at room temperature before combining — cold potato meeting warm chocolate creates texture inconsistencies. Combine all filling ingredients with the finely grated ricotta affumicata and a pinch of salt. Mix until uniform. Taste: the chocolate and cinnamon should be present but not dominant; adjust over successive preparations.

    Roll the rested dough through a pasta machine to a thin sheet, approximately 2 mm. Cut rounds of about 7–8 cm diameter. Place a small, conservative amount of filling — no more than a scant teaspoon — in the centre of each round. The raisins and figs expand with heat; overfilling causes the pasta to burst.

    THIS IS WHERE THE DISH LIVES OR DIES. Fold each round into a half-moon and press the edges firmly to expel any air. Crimp the sealed edge with a fork at close intervals. The filling's sugar content causes it to liquefy at cooking temperature; any gap in the seal will allow it to escape into the water.

    Bring a wide pot of salted water to a gentle simmer — not a rolling boil. Lower the cjalzòns in batches. Cook at a steady, gentle simmer until the pasta is tender and the half-moons float clear of the base of the pot. Vigorous boiling will burst the delicate sealed edges.

    While the pasta cooks, melt the butter in a wide pan over medium heat. Continue cooking, swirling occasionally, until the butter turns a deep golden colour and emits a pronounced nutty, toasted aroma — the noisette stage. Pale butter lacks the depth needed to counterpoint the sweet filling and smoky cheese; it must reach full noisette.

    Lift the cjalzòns from the water with a slotted spoon, drain briefly, and turn them in the noisette butter. Plate immediately and finish with a generous amount of finely grated ricotta affumicata over each portion. The cheese must be grated finely — its dry, firm texture makes coarse grating unpleasant on the palate.
