    Lay each cucumber on the board. Strike firmly along its length with the flat of a cleaver until the skin cracks and the flesh breaks open irregularly. Cut the smashed cucumber on the diagonal into rough 4–5 cm pieces. The surfaces should be ragged and fractured, not pulverised — this is confirmed by sight: the flesh is split and opened, still holding its shape.

    Transfer the pieces to a colander set over a bowl. Toss with the salt. Leave for 15 minutes, then gather the cucumber in a clean cloth and squeeze firmly to expel as much water as possible. The cucumber is ready when it feels noticeably drier and slightly firmer to the hand.

    Combine the rice vinegar, sesame oil, sugar, soy sauce, and garlic in a small bowl. Stir until the sugar dissolves. Taste: the dressing should be bright with vinegar and carry only a subtle sesame fragrance, not a dominant one.

    Immediately before serving, toss the squeezed cucumber with the dressing and, if using, the chili oil. Turn to coat every piece. The cucumber is ready to plate when each fragment glistens and the garlic is evenly distributed — assessed by sight.
