Crauti con Luganega Trentina — Sauerkraut with Trentino Pork Sausage

    Rinse the sauerkraut twice in cold water, then squeeze firmly with both hands. It must retain some sourness — rinse less for a more assertive result, more for a milder one. Set aside.

    Melt the lard or goose fat in a wide, heavy pan over medium heat. Lay the luganega in the pan in its coil and brown on both sides, turning once, until the casing is crisped and a good deal of fat has rendered into the pan. Remove the sausage and set aside. The rendered fat in the pan is what flavours the entire dish — this is where the dish lives or dies.

    In the same fat over medium heat, add the sliced onion and cook, stirring occasionally, until golden and fully softened.

    Add the squeezed sauerkraut to the pan and stir to coat thoroughly in the fat and onion. Return the luganega coil on top.

    Pour in the white wine, tuck in the bay leaves, and scatter over the caraway seeds if using. Bring to a gentle simmer, then cover and reduce the heat to very low. Braise for 45 to 60 minutes. The sauerkraut should be completely tender, its fibres fully collapsed, and the wine almost entirely absorbed into the mass.

    Remove the bay leaves. Cut the luganega into portions at the table or in the pan — the casing should yield with a faint snap and release the cinnamon and nutmeg. Serve immediately with soft polenta or rye bread.
