    Place live crawfish in a large vessel. Cover with heavily salted cold water — 1 cup coarse salt per 5 litres. Agitate occasionally. Hold for 20–30 minutes to purge mud and grit. Drain and rinse thoroughly. Discard every crawfish showing a straight tail: it died before the purge and must not enter the pot. Live crawfish curl.

    Fill a large boiling vessel with water. Add all seasoning — Zatarain's or the full spice blend of cayenne, mustard seed, coriander, bay leaves, allspice, cloves, dill seed, and salt — along with halved lemons, halved oranges, and whole garlic heads. Bring to a rolling boil. Taste the water: it must be uncomfortably spicy. Shells are a barrier; only a fraction of the seasoning will penetrate. If the water merely tastes well-seasoned, add more cayenne now.

    Add potatoes and smoked sausage to the boiling water. Cook 10–15 minutes, until the potatoes offer only slight resistance at the centre when pressed. Add corn for the final 5 minutes of this stage.

    Add the purged crawfish. Return to a rolling boil — this is audible as the full, steady churn of boiling water resumes. Cook 3–5 minutes from that return. Pull one crawfish, twist the tail, peel it, eat the tail meat: it must be tender and yielding, not rubbery or resistant. Overcooking occurs within seconds. Three minutes is sufficient for most batches.

    This is where the dish lives or dies. Kill the heat. Add extra cayenne directly to the water. Place a mesh bag of additional seasoning and halved lemons into the pot if available. Do not drain. Let the crawfish sit in the seasoned water — undisturbed — for 15–30 minutes. During this soak, the shells absorb the spiced brine and the meat relaxes and draws flavour inward. A 15-minute soak produces moderate heat throughout; 30 minutes burns beautifully. Pull a crawfish at intervals and taste the tail meat to judge soak length. A boil without a soak produces hot shells and bland tails.

    Drain the pot. Cover a large outdoor table with newspaper or butcher paper. Dump the entire contents — crawfish, corn, potatoes, sausage — directly onto the table. No plates, no utensils. To eat: twist the tail from the head sharply; suck the head to extract the hepatopancreas — the crawfish fat or butter — which concentrates both seasoning and shellfish flavour. Peel the tail and eat the meat. Serve with lemon wedges, white bread, and coleslaw alongside.
