    Heat the plancha or flat sandwich press until it is fully hot — a drop of water flicked onto the surface should evaporate on contact. Maintain high heat throughout.

    Split each section of Cuban bread lengthwise without fully separating the halves. Spread yellow mustard on both cut faces — do not substitute.

    Layer in order: Swiss cheese on the bottom half, then roast pork, then sweet ham, then dill pickle planks. Close the sandwich. The filling should be generous but the sandwich must be able to close flat.

    Brush the exterior top and bottom of each closed sandwich liberally with softened butter or lard.

    This is where the dish lives or dies: place the sandwich on the hot plancha and press down with the weighted lid — or apply firm, even pressure with a heavy pan — aggressively and without hesitation. The sandwich must be pressed to approximately 3 cm in total thickness. Hold the press for the full duration. The bread is done when both exterior faces are deep golden and crackling-crisp to the touch, the cheese is fully melted through, and the interior is hot throughout — confirmed by pressing a fingertip to the centre of the sandwich and feeling uniform heat radiating back.

    Remove from the plancha. The sandwich holds its compressed form and does not spring back. Slice on the diagonal and serve immediately.
