Combine the semola rimacinata with the salt. Add the lukewarm water gradually, working the mixture until a dough forms. Knead firmly for 10 minutes. The dough is ready when it is smooth, cohesive, and springs back slowly when pressed with a finger.

Wrap the dough and rest it for 30 minutes at room temperature. It will relax visibly and become more pliable under the hand.

While the dough rests, prepare the filling. Boil the potatoes whole in salted water, peel them, and rice them immediately. Spread the riced potato on a clean surface and allow steam to escape freely — the mass must be dry. Combine the riced potato, grated fresh Pecorino Sardo, chopped spearmint, saffron, and salt. Mix until uniform. The filling is ready when it holds a firm shape when pressed into a ball and does not weep moisture onto the hand.

Prepare a simple tomato sauce: warm the olive oil in a wide pan, add the crushed tomatoes and salt, and cook over moderate heat until the sauce is reduced, bright-red, and no longer watery. Set aside.

Roll the rested dough to 2–3 mm thickness. Cut circles of 7–8 cm diameter. Place a walnut-sized portion of filling at the centre of each circle.

This is where the dish lives or dies. Execute the chiusura a spiga (wheat-ear closure): pinch one end of the circle closed between thumb and index finger, then fold alternating flaps of dough toward the centre in sequence along the length of the seam, producing a continuous raised, serrated ridge. The technique cannot be conveyed adequately by written instruction alone — study video of an experienced Ogliastran cook before proceeding. The seal must be completely tight: no gap, no thinning at the fold. Any breach will open in cooking and the pasta will be lost. The finished culurgione should display a neat, regular ear-of-wheat ridge along its entire length.

Cook the culurgiones in generously salted boiling water in batches, without crowding. They are done when they float and the sealed ridge remains fully intact — no opening, no leaking of filling.

Lift the culurgiones with a slotted spoon directly into the warm tomato sauce. Turn once, with care, to coat. Plate and finish with a generous quantity of grated Pecorino Sardo stagionato. The mint should be the first flavour that arrives on the palate.
