    Finely chop the ya cai if not already done. Place a wok over high heat without oil. Add the ground pork and stir constantly, breaking up any clumps, until the pork has rendered its fat and the meat is completely dry, crumbled, and very lightly crisped — no moisture should remain in the wok. Add the ya cai and light soy sauce, stir for a further 30 seconds, then remove from the heat. The topping is ready when the mixture smells roasted and sweet-fermented, with no raw pork scent remaining.

    This is where the dish lives or dies. Into each serving bowl, spoon the sesame paste, then add hot water or stock one small splash at a time, stirring constantly until the paste loosens to a smooth, coating consistency — it should coat a spoon and fall in a slow ribbon, neither stiff nor watery. Only once this consistency is achieved, add the light soy sauce, black vinegar, Sichuan pepper oil, chilli oil, sugar, and toasted sesame oil. Stir to combine. Taste: the sauce should register richness, salt, acid, heat, and a distinct numbing tingle in clear succession.

    Bring a large pot of unsalted water to a rolling boil. Drop in the fresh noodles and cook until just tender with no raw flour taste at the centre — fresh thin noodles typically require 1–2 minutes. Drain immediately and thoroughly; do not rinse. The noodles should look glossy with surface starch intact.

    Divide the noodles at once between the four prepared bowls, placing them directly on top of the sauce. Spoon the pork and ya cai topping over the noodles, then scatter the sliced spring onions. Bring to the table immediately — the noodles should still be steaming when they arrive.

    The diner mixes the noodles vigorously at the table, turning and lifting until the sauce coats every strand evenly. The bowl is ready to eat when no pale, unsauced noodle remains visible and the colour is an even reddish-ochre throughout.
