    Combine the onion juice, yogurt, olive oil, cumin, paprika, black pepper, and salt in a bowl. Add the thinly sliced lamb and turn to coat evenly. The meat should be covered but not swimming in marinade; excess liquid prevents the exterior from crisping on the spit. Marinate for a minimum of four hours, refrigerated. The surface of each slice should appear fully coated and faintly tacky.

    Load the spit by pressing the marinated slices onto the vertical spike in alternating layers with sheets of fat distributed evenly throughout the stack. Compress each layer firmly before adding the next, so the mass is dense and uniform. The fat must be interspersed at regular intervals, not concentrated at the top — it must self-baste the entire column as it renders and drips downward.

    Set the vertical spit rotating against the heat element at a consistent, moderate speed. Too slow produces sections that overcook before the rest is ready; too fast does not allow the exterior to build its charred crust between rotations. Maintain this rotation without interruption throughout the cook.

    This is where the dish lives or dies: shave only the crisped exterior layer with a long knife, working in a single downward stroke. Cut too deep and the well-done crust is removed before the layer beneath has had time to char — the textural contrast, which is the point of the dish, is lost. After each pass of the knife, allow the newly exposed surface to return to the heat and re-crisp briefly before the next cut. Patient, shallow carving produces distinct textures; rapid continuous shaving produces uniform, soft meat.

    Taste the just-carved meat before assembly. The exterior must be audibly and texturally crisp; the interior, warm and moist. If both textures are not distinct, the heat or shaving cadence requires adjustment before service proceeds.

    Serve immediately on pide bread or over pilav with roasted tomatoes and charred green peppers. Döner is carved to order; do not pre-slice and hold — sliced meat steams in its own moisture within minutes and the textural contrast is destroyed.
