Drain immediately and plunge into a basin of cold water. Leave undisturbed until the noodles are fully chilled and the gel has set firm — they should feel slippery and taut, not soft or sticky. This is where the dish lives or dies: any residual heat left in the noodles will collapse their texture and ruin the cold dish character entirely.

Drain the chilled noodles thoroughly. Combine the minced garlic, sesame paste, rice vinegar, and chili oil into a cohesive dressing. Taste: the sourness must be assertive, the garlic pronounced.

Add the julienned cucumber and carrot to the noodles. Pour over just enough dressing to coat each strand — the noodles should glisten evenly without pooling liquid at the base of the bowl.

Toss thoroughly and serve at once as an appetiser, before any hot dishes reach the table. The finished dish should smell sharply of vinegar and raw garlic, with a background note of sesame.
