    Whisk eggs, sugar, mirin, and honey together in a bowl until the sugar is fully dissolved and the mixture is pale and slightly thickened. The batter should ribbon briefly from the whisk before falling back.

    Sift the flour and baking powder into the egg mixture. Fold gently until no dry streaks remain, then stir in water one tablespoon at a time to reach a smooth, pourable batter that holds a slow drip from the spoon — neither stiff nor thin.

    Rest the batter for 15 minutes at room temperature. This allows the leavening to hydrate and the gluten to relax, contributing to the castella-style moist crumb.

    Heat a flat iron griddle to 160–170 °C. Apply a minimal film of neutral oil on a folded cloth — the surface should appear barely glossy, not pooled. This is where the dish lives or dies: too cool and the pancakes will not set to their characteristic domed form; too hot and the surface browns before the interior is cooked through, producing a raw centre beneath a dark crust. Drop a small bead of batter onto the griddle — it should spread slowly and begin to set at the edges within 30 seconds.

    Ladle approximately 30 ml of batter per pancake onto the griddle. Cover with a lid or inverted tray for 1–2 minutes. When bubbles break across the entire surface and the edges appear set and matte, the pancake is ready to turn.

    Flip each pancake and cook uncovered for a further 30–45 seconds. The underside should be an even amber, matching the first face. Remove to a wire rack and cover with a clean cloth to prevent drying. Repeat to produce 16 pancakes of equal diameter.

    Once all pancakes are at room temperature, place one pancake flat-side up. Mound 40–50 g of room-temperature tsubuan at the centre, leaving a 1 cm border. Press a second pancake flat-side down onto the filling until the anko reaches but does not overflow the edge. The sandwich should feel firm but yielding to gentle pressure, with no paste visible at the seam.

    Wrap each assembled dorayaki in wax paper and rest for 30 minutes. During this period, moisture from the anko migrates into the pancake crumb. The interface, which was initially distinct, should feel uniformly soft and integrated when the dorayaki is unwrapped — the pancake and filling yielding as a single body.
