    Make the rabri first, as it requires the most time. Bring 1 litre of whole milk to a boil in a wide, heavy pan over medium heat, stirring to prevent scorching, then reduce the heat and simmer, stirring frequently and scraping the sides, until the milk has reduced to at least half its volume and is thick enough to coat the back of a spoon — a wide pan accelerates evaporation so the milk thickens steadily without scorching on the base. Stir in the sugar, saffron-steeped milk, and ground cardamom, then set aside to cool; the rabri is ready when it falls from the spoon in a slow, heavy ribbon rather than a loose stream.

    Make the sugar syrup by combining 200 g sugar and 200 ml water in a saucepan and bringing it to a boil over medium heat, stirring until the sugar dissolves. Add the saffron steep and ground cardamom, then simmer for 2–3 minutes until lightly thickened. Remove from the heat but keep warm, as a syrup that has dropped to room temperature will sit on the surface of the bread rather than draw inward; the syrup is ready when it is fragrant, faintly golden from the saffron, and warm to the touch.

    Heat the ghee in a deep frying pan over medium heat and, working in batches, fry the bread slices for 3–4 minutes per side without raising the heat, so the ghee penetrates the crumb steadily rather than sealing the crust before the inside is coloured. This is where the dish lives or dies: the bread must reach a deep golden-brown — approaching mahogany at the edges — before it leaves the pan, because pale bread carries no caramel base and the finished dish will taste flat no matter how generous the rabri. Lift each slice and rest briefly on a rack.

    While the fried bread is still hot, transfer it to a shallow dish and submerge the slices in the warm sugar syrup, because bread that has begun to cool closes its structure and the syrup will pool on the surface rather than soak through to the centre. Allow the bread to absorb the syrup for 3–4 minutes, turning once, until the interior is visibly saturated and the slices have swelled slightly.

    Arrange the soaked bread slices in individual serving dishes and spoon the prepared rabri generously over each portion. Scatter fried cashews and raisins over the top, then lay a sheet of silver leaf (vark) over each portion for festival presentation. Serve warm or at room temperature with additional cold rabri on the side; the finished dish should present contrasting textures — slightly firm caramelised edges, a syrup-saturated interior, and the dense, fragrant rabri pooling over and around each slice.
