    Warm the olive oil in a wide, heavy pan over the lowest possible heat. Add the garlic and cook very gently, turning occasionally. This is where the dish lives or dies: the garlic must reach pale gold — fragrant and sweet — and must not cross into brown, which would make it bitter and ruin every subsequent element of the preparation.

Simmer together, uncovered, for 10 minutes — the sausage fat will enrich the sauce and the beans will absorb the surrounding flavours. The sauce should be silky and unified, coating the beans without being watery.

    Remove from the heat and rest the dish, covered, for 20 minutes before serving. The beans will absorb the sausage fat and the flavours will settle into coherence. The finished dish should have a rounded, unified character — no single element standing apart from the whole.
