Method

  1. 1
Heat the oven and spread the torn khubz pieces in a single layer on a baking tray. Toast until dry and golden — not pale, so the bread has enough structure to absorb the sauces gradually without collapsing into paste, and not deeply coloured, or it will harden past the point where it can absorb at all. The finished piece should feel rigid and fully dry throughout, with no residual softness at the centre.
  2. 2
Combine the strained yogurt with the crushed garlic and lemon juice, then add chickpea cooking liquid a little at a time, stirring, so the sauce loosens evenly rather than splitting or turning watery in patches. Continue until the sauce is pourable but still has body — it should coat the back of a spoon and fall in a slow sheet, not run like water. Taste for salt and lemon balance: it should be bright and distinctly acidic.
  3. 3
Whisk the tahini with the crushed garlic and lemon juice — the mixture will seize and thicken before it smooths, which is expected, so do not add all the water at once. Add cold water gradually, whisking, because cold water rather than warm keeps the dressing pale and prevents it from turning bitter, until it is smooth and falls in a slow, steady ribbon from the whisk. It must coat without pooling.
  4. 4
Warm the chickpeas through if necessary — they must be hot when layered, so the heat they carry begins to soften the bread from above while the yogurt works from below, creating the correct gradation of textures across the layers. Arrange the toasted bread pieces across the base of a wide, shallow serving dish, spread the hot chickpeas evenly over the bread, then pour the yogurt sauce over in an even layer, followed by the tahini-garlic dressing. This is where the dish lives or dies: reverse the sequence or delay the assembly and the bread will not absorb in the correct gradation, and the temperature architecture collapses.
  5. 5
Melt the butter in a small pan over a moderate heat, add the pine nuts, and fry, stirring constantly, so they colour evenly on all sides without burning at the tips while the centres stay pale. Cook until they are an even deep gold, then pour the nuts and all the hot butter immediately over the assembled dish — they should sizzle faintly on contact with the yogurt.
  6. 6
Dust with paprika and scatter over the parsley. Bring the dish to the table without delay, because the window between correct absorption — bread simultaneously softened in its interior and still slightly crisp at the edges — and complete sogginess is ten minutes.
