    Remove the Formaggella di Monte Luino from refrigeration 45–60 minutes before serving. Place on a ceramic or wooden board — never plastic — in a cool room. The target serving temperature is 14–16 °C. The cheese is ready when it yields very slightly to light finger pressure at its centre and its surface carries a faint, clean lactic aroma.

    Shell the walnuts immediately before serving. Examine each half: the inner membrane should be pale and the flesh cream-coloured. Discard any half that shows darkening or carries a bitter, oily smell — oxidised walnut will clash with the clean character of the cheese.

    Portion the cheese: for a single age, cut the disc into four even wedges. For a composed plate presenting three stages of aging (2-week, 3-week, 4-week), arrange one piece of each per person with its corresponding honey indicated separately. The rind of a 4-week cheese will be visibly firmer and more golden than that of a 2-week disc; the interior paste of the younger cheese will be white and soft.

    Select the honey to match the cheese's stage: acacia honey for fresh (2–3 weeks); Valcuvia chestnut honey for aged (3–4 weeks). Pour each honey into a small dish or drizzle directly onto the board beside — never over — its corresponding cheese wedge. If using thyme sprigs or fig halves, place them alongside without contact with the honey.

    Serve immediately. The honey is applied by the diner at the moment of eating, not in advance. The contrast between the cool, lactic cheese and the honey is the dish; the moment that contrast collapses — when honey has softened the rind and unified the flavours — the dish is over.
