    Bring a saucepan of water to a barely perceptible simmer. Set a heatproof bowl over the pan; the base of the bowl must not touch the water surface. Whisk the eggs with 10 g of the softened butter and a pinch of white pepper directly in the bowl until fully combined and uniform in colour. The mixture should appear pale, liquid, and mobile.

    Set the bowl over the simmering bain-marie. Stir constantly with a rubber spatula using slow, deliberate strokes that cover the entire base and sides of the bowl without pause. Periodically press the palm of one hand against the underside of the bowl: it should feel comfortably and persistently warm, never hot enough to cause flinching. If you flinch, the bowl is too hot. Lift the bowl from the water for 30 seconds while continuing to stir whenever the eggs appear to be setting faster than desired.

    Continue stirring without interruption for 12–20 minutes. At approximately 5 minutes the eggs thicken into a more viscous, mobile mass. At approximately 10 minutes, barely visible fine curds — no larger than ground cream — appear at the surface. Throughout, the smell should remain warm, lactic, and clean. Any sulphurous note signals excess heat; remove the bowl from the water immediately and continue stirring off heat.

    This is where the dish lives or dies. Remove the bowl from the bain-marie when the eggs still appear slightly underdone — when the mass moves as a barely cohesive, custard-soft body and fine curds are present but a trace of liquid is still visible between them. The spatula at this point lifts the mass rather than moving through it: a perceptible, honey-like weight on the draw. Removing at apparent doneness produces overcooked eggs on the plate; the discipline to pull early, while the eggs look not quite ready, is the entire lesson of oeufs brouillés. Carryover heat in the eggs and the warm bowl equals approximately 10–15 seconds of further cooking.

    Immediately stir in the remaining 10 g butter and the crème fraîche or cream off heat. Stir until fully incorporated. The mass will settle into a thick, uniform, cream-sauce consistency with no pooling liquid and no large curds visible. Season with fine salt now and not before. Add the chive brunoise and any shaved truffle at this moment only.

    Serve immediately — in the warm bowl or on warmed plates. The eggs deteriorate faster than any other egg preparation and continue to cook if left to stand.
