    Drain the brocciu thoroughly in a fine sieve or muslin-lined colander until no excess moisture remains. Residual moisture causes steam bursts in the hot oil. Set aside at room temperature.

    Sift the chestnut flour into a bowl. Make a well and add the eggs and the eau-de-vie de châtaigne or brandy. Work inward from the centre, incorporating flour progressively. Add water gradually until the batter is smooth and thick enough to hold its shape briefly on a spoon — it should fall in a slow, heavy ribbon. Bring the batter fully to room temperature before frying; cold batter extends frying time and increases oil absorption.

    Heat the oil or lard to 175 °C. This is where the dish lives or dies: below 175 °C the exterior absorbs oil before setting; above it, the shell browns before the centre warms through. Verify with a thermometer and maintain the temperature throughout frying.

    For the filled version: take a dessert spoon of batter and place a small quantity of well-drained brocciu at its centre, then cover with a second spoon of batter, sealing the cheese entirely. For the plain version: form rounds or oblongs directly with a dessert spoon. Lower each piece gently into the oil.

    Fry in uncrowded batches, turning once, until the exterior is evenly golden with no dark patches and each fritter drains cleanly on paper without releasing oil. The interior should yield immediately under light pressure — doughy resistance indicates under-frying.

    Drain on absorbent paper. Dust with icing sugar and drizzle with dark chestnut honey. Serve within five minutes of frying — fritelli do not hold.
