    Place the purged, drained clams in a wide pot with 800 ml cold water and the ginger julienne. Bring to a moderate heat. The clams are ready when each shell opens fully and the hinge relaxes — this takes 3–4 minutes from the point the liquid begins to move. Allow one further minute on the heat, then remove the pot immediately from the burner. Any clam that has not opened is discarded.

    Lift the clams from the broth with a slotted spoon and set aside. Strain the broth through a fine cloth or double muslin to remove all grit. Reserve the broth. Shuck the clam meat from the shells, keeping any liquor that runs. Discard the shells.

    Blanch the diagonally sliced gobo in unsalted boiling water for two minutes. Drain and set aside. The gobo should yield slightly to the thumbnail but retain a distinct fibrous resistance — it will soften further in the broth.

    Return the strained clam broth to the pot. Dissolve the miso into the warm broth, stirring until no paste remains visible. The broth should be appreciably lighter in body and salt than a standard miso soup — taste and confirm it carries miso character without weight. Add the blanched gobo and simmer for three minutes to integrate.

    For the taki-komi method: combine the drained rice in a heavy-based pot (kama or equivalent) with the miso-gobo broth, measuring the liquid to the standard rice-cooking ratio for the vessel. Bring to a boil over moderate heat, reduce to the lowest flame, cover tightly, and cook until the rice has absorbed all liquid and the base of the pot emits a faint, dry, nutty fragrance — approximately 12–15 minutes. Remove from heat and rest, covered, for 10 minutes.

    Fold the reserved clam meat gently through the cooked rice — or, for kakekomi presentation, ladle the clam meat and remaining hot broth directly over individual bowls of plain cooked rice at table. In either case the clam meat should be tender and just opaque at the centre, never shrunken or rubbery.

    Finish each portion with a generous amount of raw sliced green onion laid over the surface at the last moment before serving. The onion is not stirred in. Its raw sharpness against the mild clam-miso beneath confirms the dish is complete.
