Method

  1. 1
Set the oven to 80 °C. Place four dinner plates inside to warm. Place the sausages in a cold, dry frying pan over the lowest heat available. Cook for 20–25 minutes, turning every 4–5 minutes, until the casings are deep golden-brown and the fat runs clear when pierced. Transfer to the warm oven. The sausage is done when the skin is uniformly coloured and intact — no splits, no pale patches.
  2. 2
Heat the grill to its highest setting. Arrange the back bacon rashers and the black pudding slices on the grill rack. Grill for 2–3 minutes per side until the bacon fat is rendered and coloured to the diner's preference (limp or crisp) and the black pudding is charred at the edges. Transfer both to the warm oven.
  3. 3
Place the tomato halves, cut-side up, on the same grill rack. Grill without turning for 4–5 minutes until the surface is lightly charred and the flesh is just soft but still holding its shape. Transfer to the oven. The grill — not the frying pan — is essential here; the dry heat produces the characteristic slight char without oil absorption.
  4. 4
Melt 30 g of the butter in a separate pan over medium heat. Add the mushrooms and sauté, stirring occasionally, for 5–6 minutes until golden and their moisture has cooked off. Season lightly. Transfer to the oven. The mushrooms are done when the pan is dry and the surfaces are coloured — not steamed and pallid.
  5. 5
Heat the baked beans in a small saucepan over low heat, stirring, until steaming throughout. Keep warm on the lowest setting. Cold beans on the finished plate are a common failure; they must be served at the same temperature as all other components.
  6. 6
Melt the remaining 30 g of butter in a clean frying pan over low heat. Crack the eggs in, one per portion. Spoon the hot butter continuously over the whites without touching the yolks, basting for approximately 2 minutes until the whites are fully set and opaque and the yolks remain liquid and translucent. The eggs are done when the white is firm to the spoon and the yolk moves freely beneath its membrane.
  7. 7
Toast and butter the bread. Retrieve the warm plates from the oven. Assemble all components simultaneously — sausages, bacon, black pudding, tomatoes, mushrooms, beans, egg, and toast — ensuring every element is hot to the touch. Serve immediately.
