    Combine the cubed bull meat in a non-reactive vessel with the red wine, sliced onions, crushed garlic, bouquet garni, dried orange peel, and marc de Provence. Cover and refrigerate for 24–48 hours, turning the meat once or twice. The meat is ready when it has darkened throughout and carries a deep, wine-saturated aroma.

    Lift the meat from the marinade and pat each cube thoroughly dry with kitchen paper. Strain the marinade through a sieve, reserving all liquid and discarding the solids. Dry meat accepts the heat of the pan; wet meat will steam.

    Heat the olive oil in a heavy braising pot over high heat until the oil shimmers and begins to haze. Working in uncrowded batches, sear the bull meat cubes hard on all sides. This is where the dish lives or dies: the lean meat carries no marbling to provide richness, so the deep mahogany crust formed here — a full Maillard caramelisation — is the sole source of that depth. Each batch is done when all surfaces show a dark, dry, even browning with no grey patches remaining.

    Return all seared meat to the pot. Pour in the strained marinade, add the crushed tomatoes, the second strip of dried orange peel, and the tablespoon of tapenade. Stir to combine. The liquid should come at least three-quarters up the meat; the colour should be a deep, almost opaque red-brown.

    Cover the pot and transfer to an oven at 150 °C. Braise for 3–4 hours. The stew is ready when the bull meat yields completely to a fork — it should pull apart with no resistance — and the braising liquid has reduced to a dense, wine-dark sauce.

    Add the black olives in the final 30 minutes of braising. They should warm through and take on the colour of the sauce without softening to a mush; a gentle resistance remains when pressed against the side of the pot.

    Remove from the oven. Stir in the tablespoon of red wine vinegar. Taste: the acidity should lift the heavy, meaty depth and bring all elements into sharp focus. Adjust if needed. Serve immediately over red Camargue rice, whose nutty chew absorbs the sauce.
