The night before, steep fresh jasmine flowers in 60 ml of cold water. Cover and refrigerate overnight. Strain, pressing the flowers gently, and reserve the infused water. The liquid should carry a clean, cool floral scent with no trace of bitterness.

Pass the watermelon flesh through a fine sieve or juice extractor to yield exactly 1 litre of clear juice. Discard all seeds and any white-rind matter. The juice should be a deep, translucent crimson with no fibrous pulp.

In a small bowl, whisk the cornstarch with 100 ml of the cold watermelon juice until a perfectly smooth slurry forms with no dry clumps visible. This dissolution step determines the final texture of the gelo: a lump at this stage cannot be corrected later.

Combine the remaining watermelon juice, caster sugar, and cinnamon in a heavy-based saucepan. Set over a low flame and stir until the sugar has dissolved. Whisk in the cornstarch slurry in a slow, steady stream. This is where the dish lives or dies: maintain the heat at a gentle, steady warmth — never a rolling boil — and stir constantly with a wooden spoon or silicone spatula, reaching every corner of the pan. The mixture will turn from opaque and pale to a glossy, yielding gel that coats the spoon heavily and parts cleanly when a line is drawn through it.

Remove the pan from the heat. Allow the mixture to rest for one minute, then fold in the jasmine flower water. The perfume should rise immediately — delicate and floral, not sharp. Do not return to the heat after this point.

Pour the gelo into four individual moulds. Tap each mould once on the work surface to release air pockets. Allow to cool to room temperature, then transfer to the refrigerator for a minimum of four hours, or overnight. The surface should be set firm to a light fingertip press yet give with a slight tremor beneath.

To unmould, run a thin blade around the inside edge of each mould, invert onto a chilled plate, and lift away cleanly. Scatter chocolate shavings, pistachio crumble, and dried jasmine flowers over the surface. Serve immediately, cold.
