Gnocchi alla Sorrentina con Fior di Latte

    At least 2 hours before assembly, tear the Fior di Latte di Agerola into rough pieces and lay them in a single layer on a double thickness of kitchen paper. Leave uncovered at room temperature. The cheese is ready when the paper beneath is visibly wet and the pieces feel firm to the touch rather than yielding.

    Heat the oven to 200 °C. Bake the whole unpeeled potatoes on the oven rack until a skewer meets no resistance at the centre, approximately 50–60 minutes depending on size. Remove, halve immediately, and scoop the flesh into a ricer or mouli. Spread the riced potato on a clean surface and allow the steam to escape for 5 minutes. The surface of the potato should look dry, not glossy.

    Combine the riced potato with the flour, beaten egg, and salt on the work surface. Bring together with a light hand into a cohesive dough, working it only until no dry flour remains — the dough should feel soft and slightly tacky but should not stick to the board. Over-worked dough produces dense gnocchi; stop the moment it is uniform.

    Divide the dough into eight portions. Roll each into a rope approximately 2 cm in diameter on a lightly floured surface, then cut into 2 cm lengths. Lay the formed gnocchi on a lightly floured tray in a single layer. They should hold their shape cleanly without sagging.

    Warm the olive oil in a wide pan over medium heat. Add the crushed garlic and cook until it turns pale gold and fragrant but not brown, approximately 2 minutes. Add the hand-crushed San Marzano tomatoes, the torn basil, and salt. Cook uncovered at a steady simmer for exactly 10 minutes — the sauce should remain bright red and slightly loose; it will continue to cook in the oven. A long-cooked sauce entering the oven becomes bitter and flat.

    Bring a large pot of generously salted water to a rolling boil. Cook the gnocchi in two or three batches, removing each piece with a slotted spoon approximately 20 seconds after it rises to the surface. Transfer to a tray lightly filmed with the tomato sauce to prevent sticking. The gnocchi should be just set — tender but holding their form.

    This is where the dish lives or dies. Set the oven to 200 °C. Lightly oil a shallow terracotta dish. Spoon a thin film of tomato sauce across the base. Add half the gnocchi in an even layer, spoon over sauce, scatter torn basil leaves, lay pieces of drained Fior di Latte across the surface, and finish with a generous dusting of Parmigiano. Repeat the layering once more — gnocchi, sauce, basil, Fior di Latte, Parmigiano. Drizzle with a little olive oil. Bake for 15–18 minutes only. The top must be golden and visibly bubbling; the cheese must be fully melted and beginning to colour at its edges. Longer than 18 minutes produces rubbery gnocchi and dry, stringy cheese.

    Remove from the oven and allow to stand for no more than 2 minutes. Drizzle with raw Campanian extra-virgin olive oil. Serve immediately, breaking through the golden top at the table to reveal the steaming interior. The dish will not hold — serve within 5 minutes.
