    TAKIKOMI GOHAN — MATSUTAKE RICE. Combine the dashi, soy sauce, sake, and mirin. Place the washed, drained rice in the rice cooker bowl or heavy pot. Pour the seasoned dashi over the rice to the standard 1:1 rice-to-liquid level, reducing the dashi volume to compensate for moisture the matsutake will release during cooking. Lay the sliced matsutake across the surface of the rice in a single layer. Do not stir or push the mushrooms into the rice — the ingredients must remain on top so the base layer of rice does not burn on the heat element. The surface arrangement is correct when rice and liquid are entirely below the mushroom layer.

    Cook by the standard rice-cooker cycle, or on the stovetop: bring to a boil over medium heat, reduce to the lowest possible flame, cover tightly, and cook until all liquid is absorbed — approximately 12 minutes — then rest, lid on, for 10 minutes off the heat. This step is where the dish lives or dies: insufficient liquid produces hard-centred grains; excess liquid from the mushrooms, if not accounted for in the initial measure, produces soggy, flat rice. The pot is ready when steam stops escaping from under the lid and a faint crackling sound has ceased.

    Uncover and fold the rice gently with a rice paddle, turning from the bottom upward in broad strokes to distribute the matsutake without mashing the grains. Each grain should carry the amber-stained colour of the dashi-soy liquid and the distinctive spicy-pine aroma of the matsutake should be present throughout the pot, not concentrated only at the surface.

    OKAYU — RICE CONGEE. Place the washed rice and cold water in a wide, heavy pot. Do not pre-boil the water; the cold start is essential to the texture. Bring slowly to a bare simmer over 15 minutes. Once simmering, reduce the heat to the lowest setting, cover with a lid left slightly ajar to prevent boiling over, and cook without vigorous stirring. The okayu is done when the rice has fully bloomed and the mass is cohesive and creamy — distinct grains remain suspended in a thick, pale broth rather than collapsing to a paste. Stir only once or twice during cooking; over-stirring produces a gummy, homogeneous texture that is the primary fault of this preparation.

    SEKIHAN — CELEBRATION RED RICE. Boil the azuki beans in fresh water; discard this first water. Return beans to the pot with fresh water and simmer until just tender but not split. Reserve the second cooking liquid — this is the red dye. Drain the washed glutinous rice, combine with the azuki and enough reserved cooking liquid to steam, and cook by steaming or in a rice cooker on the glutinous-rice setting. The rice is done when it has taken on a uniform dusky red-pink colour throughout and each grain is tender but still distinct. Pale or uneven colour indicates insufficient contact with the azuki liquid.
