    Combine the dashi, soy sauce, mirin, sake, and sugar in a wide, shallow pan. Set over medium heat and bring to a steady simmer — the surface should show small, consistent bubbles, not a rolling boil.

    Add the sliced onions. Simmer for 5–7 minutes, stirring occasionally, until the onions have completely softened and turned translucent. They must be fully yielding before the beef enters the pan — any residual firmness at this stage will not be corrected later.

    Confirm the liquid is at a simmer, then add the beef slices one by one, separating each slice as it enters the liquid so that no two pieces are stuck together. Simmer for exactly 90 seconds. This is where the dish lives or dies: at 90 seconds the beef is just cooked through — tender, still faintly pink, and moist; at 3 minutes the slices tighten and begin to chew. Remove the pan from the heat the moment the beef loses its raw colour.

    Divide the hot rice among four deep bowls. Ladle the beef, onions, and cooking liquid over the rice in equal portions. Crown each bowl with a tablespoon of beni shoga. Serve immediately — the rice should steam visibly when the bowl reaches the table.
