    The day before cooking, dry the chicken thoroughly inside and out. Leave uncovered on a rack in the refrigerator overnight. The skin must be completely without surface moisture before proceeding. Test by pressing a piece of dry paper against the skin — it should lift away clean.

    Rub the cavity firmly with fine salt, white pepper, and dried tangerine peel. Press the sliced sand ginger directly against the cavity flesh with firm contact — placed loosely, it does not penetrate. Wrap the bird entirely in dry parchment or wax paper. The wrap must be dry; any moisture will steam the skin and destroy its final texture.

    Place the coarse rock salt in a deep wok or pot and heat over high flame, stirring occasionally. The salt is at temperature when a piece of fresh ginger dropped onto its surface browns immediately. This is where the dish lives or dies: salt that is merely warm produces uneven cooking, a pale result, and none of the characteristic dry skin. Do not bury the bird until the salt has reached full temperature.

    Make a hollow in the hot salt. Set the wrapped bird in the hollow breast-side up and pour the remaining heated salt over and around it until the bird is buried completely with no paper visible. Cover the wok or pot immediately. Cook undisturbed for 18–20 minutes per kilogram of bird weight. The salt medium cooks by indirect conduction; the cover must not be lifted during this period.

    Lift the bird from the salt and remove the paper wrapping. The skin should be pale golden-yellow, dry, papery, and intact — no wet spots, no cracks from steam pressure. The fragrance of salt, sand ginger, and rendered chicken fat should be immediate on opening.

    Rest the bird undisturbed for 5 minutes before dismemberment. Cutting immediately sacrifices the redistributed juices. The flesh should pull cleanly from the bone with faint resistance — not falling apart, not resistant. The skin should be paper-thin and slightly crisp.

    Pound the sand ginger and garlic to a paste with salt. Pour hot rendered chicken fat or peanut oil over the mixture. Apply the sauce to the cut pieces at table. Serve with white rice only.
