Cook the rinsed sushi rice according to the absorption method. While hot, fold through the combined rice vinegar, sugar, and salt, then fold in the furikake. Fan the rice as it is turned to drive off excess steam. The rice is ready when it is glossy, distinct-grained, and just warm to the touch — not hot, not cold.

Examine each piece of fish under good light before cutting. The surface must show clean colour — deep ruby for ʻahi, bright coral-orange for salmon — with no grey edges, no ammonia or sour note on the nose, and firm, resilient resistance to a light press. This is where the dish lives or dies: sushi is raw fish, and the fish must be impeccable; everything else is infrastructure.

Shape the ʻahi nigiri: moisten hands, portion 30 g of sushi rice per piece, press into a firm oval, then drape one ʻahi slice across the top, pressing gently to adhere. The finished nigiri holds its form under light handling without crumbling.

Prepare the spicy ahi filling: combine the diced ʻahi with Japanese mayonnaise and sriracha, mixing until the fish is evenly coated. Taste — the heat should be distinct but not dominant. Roll the spicy ahi maki: lay a halved nori sheet on a bamboo mat, spread a thin, even layer of sushi rice to within 1 cm of the far edge, place the filling in a line across the centre, and roll firmly away from you. The completed roll is tight enough that the cross-section holds a clean circle when cut.

Prepare the Spam musubi: heat a dry pan over medium heat, fry the Spam planks until browned on each side, then glaze with the combined soy sauce and sugar, turning until each plank is lacquered and caramelised. Press a block of sushi rice into a musubi mould or use the Spam tin itself, top with one glazed Spam plank, and belt with a nori strip. The nori should adhere and hold the block firm.

Slice the salmon for sashimi: cut clean oblique slices of 5 mm against the grain. Arrange on the platter alongside the nigiri, the sliced spicy ahi roll, and the Spam musubi. The finished platter presents as colourful and generous, with the aroma of vinegared rice and fresh fish. Serve immediately with soy sauce, pickled ginger, and wasabi.
